From a Dietitian's Perspective
This recipe, unlike classic banana muffins, is gluten-free, refined sugar-free and high in fiber.
Ingredients
3 ripe bananas (mashed)
3 eggs
50 ml coconut oil (or olive oil)
120 g oat flour
100 g almond flour (or substitute the same amount of oat flour)
1 teaspoon baking powder
Vanilla extract and cinnamon (optional)
100 ml milk (Vegetable milk can be used)
2–3 tablespoons chocolate chips (or 80% bittersweet chocolate chips)
Preparation
Step 1
Mash the bananas in a bowl, add the eggs and oil. Add the vanilla and cinnamon.
Step 2
In a separate bowl, mix the flours and baking powder. Add the dry ingredients to the liquids, obtaining a homogeneous mixture.
Step 3
Finally add the chocolate chips and mix. Pour into a baking tray lined with baking paper and bake for 50 minutes.
